You guys. What happened to April? Somehow it’s the first of May and Cinco de Mayo is right around the corner! I love any excuse to eat delicious food, and I figured what better time than now to round up some of my favorite Mexican-inspired dishes to celebrate!
Slow Cooker Barbacoa Pork Tacos – These tacos can easily take center stage at your Cinco de Mayo fiesta. They require little prep time, make your entire house smell heavenly, and your friends will be asking you for the recipe before they leave.
Pico de Gallo – This classic pico recipe is a favorite in our kitchen. I’m counting the days till we have fresh tomatoes from our garden so I can mix up a batch of this flavorful salsa!
